PUMPKIN & SPINACH LEAF SALAD

Recipe Ingredients

  • Qtr pumpkin.150g spinach leaves.80g fresh whole beans.4 rashers whole bacon strips (rindless)...Dressing-150g plain yoghurt.1/4 of a squeezed lemon. kent pumpkin, spinach leaves, fresh beans, bacon.DRESSING- plain natural yoghurt and lemon juice to suit taste approx 1tsp

Recipe Instructions

Dice bacon and fry until crispy,then set aside.Dice up pumpkin into 1cm cubes and fry in pan or roast in oven with olive oil at 180c until golden and slightly brown. Cut beans into half and steam until slightly soft,yet still crunchy,once done set aside.Wash spinach leaves and allow to dry.Arrange spinach leaves on plate and sprinkle bacon,pumpkin and beans on top of leaves.

DRESSING- Put yoghurt in to a small bowl and add lemon juice (approx 1/4 of the lemon), and fold in the juice to the yoghurt.
Drizzle over salad.

SERVE WARM OR COLD WITH STEAK OR CHICKEN BREAST OR ROAST MEAL....YUMMY...
