Beetroot

An earthy, sweet root vegetable, eaten roasted, boiled, pickled or grated raw into salads, with a vivid colour that stains readily.

Roast it whole, wrapped in foil, to concentrate its sweetness, and wear gloves or wash hands promptly afterwards to avoid staining.
