Dark soy sauce

A thicker, less salty but more deeply flavoured soy sauce than the light variety, used mainly for colour and rich flavour rather than seasoning.

Use it in smaller amounts alongside light soy sauce for balanced seasoning, as its role is mainly to darken sauces and glazes rather than to salt them.
