Fresh oarsley

A fresh, mild herb used both as a flavouring and a garnish, with curly and flat-leaf varieties offering slightly different texture and intensity.

Add it at the end of cooking to keep its fresh flavour and colour, and chop finely with a sharp knife rather than crushing it to avoid bruising.
