Glace cherries

Cherries preserved in sugar syrup, sweet and chewy, traditionally used in cakes like cherry Madeira and fruit cake.

Rinse and dry them well before folding into batter to remove excess sticky syrup, then toss in a little flour to stop them sinking during baking.
