Lamb stock

A rich, savoury liquid made by simmering lamb bones with water and aromatics, used to deepen the flavour of lamb stews, curries and gravies.

Use it in place of a lighter stock when a dish is built around lamb, as it reinforces rather than dilutes the meat's flavour.
