Plain chocolate chips

Small pieces of dark (plain) chocolate designed to hold their shape when baked, giving pockets of melted chocolate through cookies, muffins and cakes.

Toss them in a little flour before folding into batter to stop them sinking, and fold in at the last stage so they don't melt into the mix.
