The dried stigmas of the crocus flower, the world's most expensive spice, giving dishes like paella and risotto a distinctive golden colour and delicate, floral flavour.

Steep the threads in a little warm water or stock for 10–15 minutes before adding to a dish, to draw out their full colour and flavour.
