Sake

A Japanese rice wine used both as a drink and a cooking ingredient, adding subtle sweetness and helping to tenderise meat and fish in marinades.

Simmer it briefly to cook off the alcohol before it's incorporated into a sauce, and use a cooking-grade sake rather than a premium drinking one.
