The whole dried seed pod of the vanilla orchid, offering the purest, most fragrant vanilla flavour, with tiny flecked seeds visible in the finished dish.
Split the pod lengthways and scrape out the seeds with the back of a knife, then infuse both pod and seeds in warm liquid (like cream or milk) before removing the pod.
