Water chestnuts

A crisp, mildly sweet aquatic vegetable (usually sold tinned) that keeps its crunch even after cooking, popular in stir-fries and fillings.

Add them near the end of stir-frying to preserve their texture, and rinse tinned ones well before use to remove any tinny flavour.
