Method

This fresh and vibrant salad combines creamy avocado, juicy tomatoes, crisp cucumber, and fragrant herbs with a zesty lime dressing. It's a perfect side dish for barbecues, grilled meats, seafood, or as a light lunch.

Step 1: Prepare the Vegetables

Halve the cherry tomatoes.
Dice the cucumber into bite-sized pieces.
Finely slice the red onion.
Chop the coriander, parsley, and mint.

Step 2: Prepare the Avocados

Cut the avocados in half and remove the stones.
Peel away the skin.
Dice the avocado flesh into bite-sized cubes.
Place the avocado in a large mixing bowl.

Step 3: Make the Dressing

In a small bowl, combine:
2tbsp extra virgin olive oil
1tbsp lime juice
1tsp lime zest
1tsp honey
1tsp Dijon mustard
Add the salt and black pepper.
Whisk until smooth and well combined.

Step 4: Assemble the Salad

Add the tomatoes, cucumber, and red onion to the bowl with the avocado.
Add the chopped coriander, parsley, and mint.
Gently toss to combine.

Step 5: Dress the Salad

Pour the dressing over the salad.
Toss gently to coat all the ingredients without crushing the avocado.
