Method
These crispy Parmesan courgette fries are a delicious, lighter alternative to traditional fries. Coated in Parmesan and breadcrumbs, then baked until golden, they're perfect as a side dish, snack, or appetiser.
Preheat the oven
Preheat your oven to 220°C (200°C fan).
Line a baking tray with baking paper.
Prepare the courgettes
Wash and dry the courgettes.
Trim off the ends.
Cut each courgette into fry-shaped sticks approximately 1cm thick.
Prepare the coating
In a shallow bowl, combine:
50g Parmesan cheese
60g breadcrumbs
1tsp garlic powder
1tsp paprika
½tsp salt
¼tsp black pepper
Prepare the egg wash
In a separate bowl, beat the egg until smooth.
Coat the courgette fries
Dip each courgette stick into the beaten egg.
Allow any excess egg to drip off.
Roll the courgette stick in the Parmesan breadcrumb mixture until evenly coated.
Arrange on the tray
Place the coated courgette fries in a single layer on the prepared baking tray.
Drizzle with 1tbsp olive oil or lightly brush it over the fries.
Bake
Bake for 20-25 minutes, turning halfway through cooking.
Cook until the coating is crisp and golden brown.
Serve
Remove from the oven and let cool for 2-3 minutes.
Serve immediately while hot and crispy.
Optional Dipping Sauce
Mix together:
100g Greek yoghurt
1tsp lemon juice
½tsp garlic powder
Pinch of salt
