Ingredients

  • 225g self raising flour
  • 2 teaspoons baking powder
  • 100g soft margarine
  • 50g granulated sugar
  • 100g mixed dried fruit
  • 50g currants
  • 1 egg
  • 1 tablespoon milk
  • demerara sugar

Instructions

1. Pre-heat oven to 200C/400F/Gas 6.
2. Lightly grease 2 baking trays.
3. Measure the flour and baking powder into a large bowl, add the margarine and rub in with the fingertips until the mixture is like fine breadcrumbs.
4. Stir in the sugar and fruit.
5. Add the egg and milk and mix to a stiff mixture (if dry, add a little more milk).
6. Shape the mixture into about 12 rough mounds on the prepared baking trays.
7. Sprinkle generously with demerara sugar.
8. Bake in the pre-heated oven for about 15 minutes or until pale golden brown at the edges.
9. Cool on a wire rack.
