Chocolate and Walnut Brownies

Ingredients

  • 350g plain chocolate, broken into pieces
  • 225g margarine
  • 2 tsp instant coffee
  • 2 tblsp hot water
  • 2 eggs
  • 225g caster sugar
  • 1 tsp vanilla essence
  • 75g self raising flour
  • 175g walnut pieces, chopped
  • 225g plain chocolate chips

Instructions

1. Pre heat oven to 190C/Gas 5.
2. Grease and base line a 30 x 23 cm roasting tin.
3. Melt the chocolate slowly in a bowl with the margarine over a pan of hot water. Allow to cool.
4. Dissolve the coffee in the hot water.
5. Mix together the coffee, eggs, sugar and vanilla essence in another bowl.
6. Gradually beat in the chocolate mixture.
7. Fold in the flour, walnuts and chocolate chips.
8. Pour the mixture into the prepared tin.
9. Bake in the pre heated oven for about 40-45 minutes or until firm to the touch and a dull crust has formed.
10. Leave to cool in the tin.
11. When the cake is cold cut into 24 squares.
