Lemon and Honey Chicken

Recipe Ingredients

  • 3 lemons
  • 50g butter
  • 3 tbsp clear honey
  • 1 garlic clove
  • 4 rosemary sprigs (just the leaves)
  • 8 chicken pies (thighs or drumsticks)
  • 750g potatoes

Recipe Instructions

1. Preheat oven to 200C.
2. Finely chop the garlic. Sqeeze the juice of two lemons and heat gently in a pan with the butter, honey, garlic and rosemary.
3. Arrange the chciken on one layer in a shallow roasting tin.
4. Peel and chop the potatoes into small chunks and put around the chicken. Drizzle the heated lemon butter over the chicken and potatoes.
5. Cut the remaining lemon in to 8 wedges and place amongst the potatoes
6. Roat the chicken for 50mins to 1hr, stirring a couple of times, until the chicken is cooked and the potatoes are crisp and golden.
