Apple juice

A sweet, mild juice pressed from apples, drunk on its own or used to add gentle sweetness to sauces, glazes and marinades.

Reduce it in a pan to concentrate its sweetness into a glaze for pork or poultry, or use it in place of some stock for a subtly sweet braise.
