Recipes that use Bicarbonate of soda
A raising agent that needs an acidic ingredient (buttermilk, lemon juice, brown sugar) to activate and give bakes lift.
Mix it thoroughly into dry ingredients so it's evenly distributed, and don't confuse it with baking powder, which already contains its own acid.
