Method

These soft, golden pretzel bites are coated in garlic butter and topped with Parmesan cheese for an irresistible snack. Perfect for parties, game days, or sharing with friends and family.

Step 1: Make the Dough

In a large mixing bowl, combine the bread flour, dried yeast, caster sugar, and salt.
Gradually pour in the warm water.
Mix until a dough forms.
Knead for 8 to 10 minutes until smooth and elastic.
Place the dough in a lightly oiled bowl.
Cover and leave to rise in a warm place for 1 hour, or until doubled in size.

Step 2: Prepare the Oven

Preheat the oven to 220°C (200°C fan).
Line two baking trays with baking paper.

Step 3: Shape the Pretzel Bites

Turn the dough onto a lightly floured surface.
Divide the dough into 4 equal portions.
Roll each portion into a rope approximately 2cm thick.
Cut each rope into bite-sized pieces about 3cm long.

Step 4: Prepare the Baking Soda Bath

Bring 1 litre of water to a gentle simmer in a large saucepan.
Carefully add the bicarbonate of soda.
Stir until dissolved.

Step 5: Boil the Pretzel Bites

Working in batches, add the dough pieces to the baking soda bath.
Simmer for 20 to 30 seconds.
Remove using a slotted spoon.
Place the pretzel bites on the prepared baking trays.

Step 6: Bake

Bake for 12 to 15 minutes until deep golden brown.
Remove from the oven and allow to cool for 2 minutes.

Step 7: Prepare the Garlic Parmesan Coating

In a small bowl, combine the melted butter and minced garlic.
Brush the warm pretzel bites generously with the garlic butter.
Sprinkle evenly with the grated Parmesan cheese.
Scatter over the chopped parsley.
Finish with the flaky sea salt.

Step 8: Serve

Transfer to a serving platter.
Serve warm while the cheese is slightly melted and the pretzel bites are soft.

Serving Suggestions

Serve with warm cheese sauce for dipping.
Pair with marinara sauce or garlic aioli.
Enjoy alongside a cold soft drink or sparkling lemonade.
Add a pinch of chilli flakes to the garlic butter for extra heat.
