Cooking apples

A tart, firm apple variety (such as Bramley) that breaks down into a soft, fluffy purée when cooked, used in pies, crumbles and sauces.

Add sugar to taste as they cook, since cooking apples are much more tart than eating varieties, and cook gently to control how much they break down.
