Maple syrup

A sweet, distinctively flavoured syrup tapped from maple trees, used on pancakes, in baking, glazes and dressings.

Add it towards the end of cooking where possible to preserve its delicate flavour, and use pure maple syrup rather than 'maple-flavoured' syrup for the real thing.
