Method
This colourful and refreshing Asian-inspired slaw combines crisp vegetables with a flavourful sesame dressing. It's perfect as a side dish for grilled meats, barbecues, picnics, or as a light lunch.
Step 1: Prepare the Vegetables
Finely shred the white cabbage and red cabbage.
Julienne or grate the carrots.
Thinly slice the red pepper.
Cut the cucumber into thin matchsticks.
Finely slice the spring onions.
Chop the fresh coriander.
Step 2: Prepare the Dressing
In a small bowl, combine the sesame oil, soy sauce, rice vinegar, honey, grated ginger, and lime juice.
Add 1tsp sesame seeds and the black pepper.
Whisk until the dressing is fully combined.
Step 3: Assemble the Slaw
Add the white cabbage, red cabbage, carrots, red pepper, cucumber, spring onions, and coriander to a large mixing bowl.
Toss the vegetables together until evenly distributed.
Step 4: Add the Dressing
Pour the sesame dressing over the vegetables.
Toss thoroughly to ensure all the vegetables are lightly coated.
Step 5: Add the Crunchy Toppings
Sprinkle over the chopped roasted peanuts.
Add the black sesame seeds and white sesame seeds.
Toss lightly to distribute the toppings while maintaining their crunch.
Step 6: Chill and Serve
Allow the slaw to rest in the refrigerator for 15 minutes before serving.
Toss once more before serving.
Transfer to a serving bowl or platter and enjoy.
