Method
A quick and elegant seafood dish featuring tender tuna steaks coated in a sweet and savoury honey soy glaze with hints of garlic, ginger, and sesame.
Step 1: Prepare the glaze
In a bowl, combine:
Soy sauce
Honey
Sesame oil
Rice vinegar
Minced garlic
Grated ginger
Black pepper
Whisk until the honey is fully dissolved.
Step 2: Marinate the tuna
Place the tuna steaks in a shallow dish.
Pour half of the glaze over the tuna and turn to coat evenly.
Leave to marinate for 15 minutes.
Reserve the remaining glaze for later.
Step 3: Heat the pan
Heat the vegetable oil in a large frying pan or griddle pan over medium-high heat.
Step 4: Cook the tuna
Remove the tuna steaks from the marinade and allow any excess to drip off.
Cook for:
2-3 minutes on the first side
2-3 minutes on the second side
For medium-rare tuna, the centre should remain slightly pink. Adjust cooking time to your preferred doneness.
Step 5: Glaze the tuna
Reduce the heat to medium.
Pour the reserved glaze into the pan.
Cook for 1-2 minutes, turning the tuna steaks occasionally, until the glaze thickens slightly and coats the fish.
Step 6: Rest
Transfer the tuna steaks to a serving platter and allow them to rest for 2 minutes.
Step 7: Garnish and serve
Sprinkle with:
Sliced spring onions
Sesame seeds
Serve immediately with fresh lime wedges.
Chef's Tip
Avoid overcooking tuna steaks, as they can become dry. For the best texture and flavour, aim for a lightly seared exterior with a tender pink centre.
