Method

A quick and delicious one-pan meal featuring tender salmon glazed with a sweet and savoury teriyaki sauce, roasted alongside crisp-tender broccoli.

Step 1: Preheat the Oven

Preheat the oven to 220°C (200°C fan).

Line a large baking tray with baking paper.

Step 2: Prepare the Teriyaki Sauce

In a small bowl, whisk together:

Soy sauce
Honey
Brown sugar
Rice vinegar
Sesame oil
Garlic
Ginger

In a separate small bowl, mix the cornflour with the water until smooth.

Add the cornflour mixture to the sauce and stir well.

Step 3: Prepare the Broccoli

Place the broccoli florets on one side of the baking tray.

Drizzle with the vegetable oil.

Season with the salt and black pepper.

Toss until evenly coated and spread into a single layer.

Step 4: Add the Salmon

Place the salmon fillets on the other side of the baking tray, skin-side down if using skin-on fillets.

Brush each fillet generously with the teriyaki sauce.

Reserve the remaining sauce for later.

Step 5: Roast

Place the tray in the oven and roast for 12 minutes.

Remove the tray and brush the salmon with more of the reserved sauce.

Return to the oven and cook for a further 3 to 5 minutes, or until the salmon flakes easily with a fork and the broccoli is tender with lightly charred edges.

Step 6: Finish the Dish

If desired, warm any remaining teriyaki sauce in a small saucepan for 1 to 2 minutes until slightly thickened.

Drizzle the sauce over the cooked salmon and broccoli.

Step 7: Garnish and Serve

Sprinkle with the sesame seeds and sliced spring onions.

Serve immediately with steamed rice, noodles, or a fresh side salad.
