Method
A vibrant Thai-inspired grilled snapper dish with fresh lime, chilli, garlic, and coriander. The fish is marinated for maximum flavour, then grilled until perfectly tender and lightly charred.
Step 1: Prepare the Marinade
In a bowl, combine:
Fish sauce
Soy sauce
Lime juice
Vegetable oil
Garlic
Red chilli
Green chilli
Brown sugar
Ginger
Black pepper
Mix well until the sugar has dissolved.
Step 2: Marinate the Fish
Pat the snapper fillets dry with kitchen paper.
Place the fillets in a shallow dish.
Pour the marinade over the fish and turn to coat evenly.
Cover and refrigerate for 20 to 30 minutes.
Step 3: Preheat the Grill
Preheat an outdoor grill or grill pan to medium-high heat.
Lightly oil the grill grates to help prevent sticking.
Step 4: Grill the Snapper
Remove the fish from the marinade and allow any excess to drip off.
Place the fillets skin-side down on the grill.
Cook for 4 to 5 minutes.
Carefully turn and cook for a further 3 to 4 minutes, or until the fish is opaque and flakes easily with a fork.
Step 5: Rest the Fish
Transfer the snapper to a serving platter.
Allow it to rest for 2 minutes.
Step 6: Garnish
Sprinkle the chopped coriander and sliced red chilli over the fish.
Serve with lime wedges on the side.
Step 7: Serve
Serve immediately with jasmine rice, grilled vegetables, or a fresh Thai-style salad.
