Cocoa powder

Unsweetened, ground cocoa solids with a deep, slightly bitter chocolate flavour, used in baking, drinks and sauces.

Sift it with the dry ingredients to avoid lumps, and mix it to a smooth paste with a little hot water or milk before adding to batters or sauces.
