Method
An indulgent dessert featuring rich chocolate brownies, three kinds of chocolate, creamy ice cream, and a decadent fudge sauce.
Step 1: Prepare the Brownies
Preheat the oven to 180°C (160°C fan).
Line a 20cm square baking tin with baking paper.
Place the dark chocolate and butter in a heatproof bowl.
Melt gently over a pan of simmering water or in short bursts in the microwave.
Stir until smooth and set aside to cool slightly.
In a large bowl, whisk the sugar and eggs until combined.
Add the vanilla extract.
Pour in the melted chocolate mixture and mix well.
Sift in the flour and cocoa powder.
Fold gently until no dry streaks remain.
Stir in the milk chocolate chunks.
Stir in the white chocolate chunks.
Pour the batter into the prepared tin and spread evenly.
Bake for 25-30 minutes until the top is set but the centre remains slightly fudgy.
Allow to cool completely before cutting into squares.
Step 2: Make the Chocolate Fudge Sauce
Place the chopped dark chocolate into a heatproof bowl.
Heat the double cream in a small saucepan until just beginning to simmer.
Pour the hot cream over the chocolate.
Leave for 1 minute.
Add the butter and golden syrup.
Stir until smooth, glossy and fully combined.
Keep warm until ready to serve.
Step 3: Assemble the Sundaes
Place a brownie square into the bottom of each serving glass or bowl.
Add a scoop of vanilla ice cream.
Drizzle with warm chocolate fudge sauce.
Add another piece of brownie.
Add a second scoop of vanilla ice cream.
Drizzle over more fudge sauce.
Sprinkle with grated milk chocolate.
Sprinkle with grated white chocolate.
Scatter over the dark chocolate shavings.
Add chocolate sprinkles.
Top with a maraschino cherry.
Step 4: Serve
Serve immediately while the brownie is slightly warm and the ice cream is cold.
Spoon through all the layers to enjoy the combination of warm brownie, cold ice cream and rich chocolate fudge sauce.
Tip: For an even more luxurious sundae, warm the brownie pieces for 10-15 seconds in the microwave just before assembling.
