Plain flour

An all-purpose wheat flour with no raising agent added, the base for pastry, sauces, biscuits and thickening.

Whisk it into a paste with a little cold liquid before adding to a hot sauce to avoid lumps, and weigh rather than scoop when baking for accuracy.
