Method
These Jalapeño Cheddar Corn Fritters are crispy on the outside, soft on the inside, and packed with sweet corn, sharp cheddar, and a gentle kick of heat from fresh jalapeños. They're perfect as a snack, appetiser, or side dish.
Step 1: Prepare the batter
Place the sweetcorn in a large mixing bowl.
Add the grated cheddar cheese.
Add the diced jalapeños.
Add the sliced spring onions.
Mix to combine.
Step 2: Combine the dry ingredients
In a separate bowl, add the plain flour.
Add the baking powder.
Add the smoked paprika.
Add the garlic powder.
Add the salt and black pepper.
Stir until evenly mixed.
Step 3: Make the batter
Add the dry ingredients to the corn mixture.
Crack in the eggs.
Pour in the milk.
Stir until a thick batter forms and all ingredients are evenly distributed.
Step 4: Cook the fritters
Heat 1tbsp vegetable oil in a large frying pan over medium heat.
Spoon approximately 2tbsp of batter per fritter into the pan.
Gently flatten each fritter with the back of the spoon.
Cook for 3 to 4 minutes on each side until golden brown and crisp.
Add the remaining 1tbsp vegetable oil as needed for the second batch.
Transfer the cooked fritters to a plate lined with kitchen paper.
Step 5: Serve
Allow the fritters to cool for 2 minutes.
Serve warm for the best texture and flavour.

Storage
Store leftover fritters in an airtight container in the refrigerator for up to 3 days. Reheat in a hot oven at 180°C for 8 to 10 minutes until warmed through and crisp.
