Ingredients
For the Fritters
For the Garlic Yogurt Dip
Method
Step 1: Prepare the Courgettes
Place the grated courgettes in a colander.
Sprinkle over the salt and toss well.
Leave for 15 minutes to draw out excess moisture.
Transfer the courgettes to a clean tea towel and squeeze out as much liquid as possible.
Step 2: Make the Fritter Mixture
Put the drained courgettes into a large mixing bowl.
Add the Parmesan, flour, eggs, crushed garlic, parsley, and black pepper.
Mix thoroughly until all ingredients are evenly combined and a thick batter forms.
Step 3: Cook the Fritters
Heat 1tbsp olive oil in a large frying pan over medium heat.
Spoon heaped tablespoons of the mixture into the pan, flattening each slightly with the back of the spoon.
Cook for 3 to 4 minutes on each side until golden brown and crisp.
Transfer to a plate lined with kitchen paper.
Repeat with the remaining mixture, adding the remaining 1tbsp olive oil as needed.
Step 4: Make the Garlic Yogurt Dip
In a small bowl, combine the Greek yogurt, grated garlic, lemon juice, chives, and black pepper.
Stir until smooth and well mixed.
Chill until ready to serve.
Step 5: Serve
Arrange the warm fritters on a serving platter.
Serve with the garlic yogurt dip on the side.
Garnish with extra parsley or chives if desired.
Tips
For extra crisp fritters, ensure the courgettes are squeezed as dry as possible.
These fritters can be served as a starter, light lunch, side dish, or vegetarian main course with a green salad.
Leftover fritters can be stored in the refrigerator for up to 2 days and reheated in a hot oven for 5 to 7 minutes.
