Olive oil

A fruity, flavourful oil pressed from olives, used for dressings, marinades and general cooking; extra virgin grades are best kept for dressing rather than high-heat frying.

Use a lighter (not extra virgin) olive oil for frying at higher temperatures, and save your best bottle for drizzling over finished dishes where its flavour shines.
