Step 1
Place the flour, yeast and salt in a large mixing bowl and stir together.
Step 2
Add the olive oil and warm water. Mix until a dough forms.
Step 3
Transfer the dough to a lightly floured surface and knead for 8 to 10 minutes until smooth and elastic.
Step 4
Place the dough in a lightly oiled bowl, cover and leave to rise in a warm place for 1 hour, or until doubled in size.
Step 5
Preheat the oven to 240°C (220°C fan). Place a baking tray or pizza stone in the oven to heat up.
Step 6
In a small bowl, combine the passata, garlic, oregano, olive oil, salt and black pepper.
Step 7
Punch down the risen dough and divide into 2 equal portions.
Step 8
Roll or stretch each portion into a round pizza approximately 30cm in diameter.
Step 9
Spread the tomato sauce evenly over the pizza bases, leaving a 1cm border around the edges.
Step 10
Scatter the mozzarella evenly over the sauce.
Step 11
Sprinkle over the Parmesan cheese.
Step 12
Carefully place the pizzas onto the hot baking tray or pizza stone.
Step 13
Bake for 12 to 15 minutes until the crust is golden and the cheese is bubbling.
Step 14
Remove from the oven and scatter over the fresh basil leaves.
Step 15
Allow to rest for 2 minutes before slicing and serving.
