Spinach and Feta Stuffed Chicken Breast

Method

A delicious, juicy chicken breast filled with a creamy spinach and feta mixture, then seared and baked until perfectly cooked.

1. Prepare the filling

Heat 1tbsp olive oil in a frying pan over medium heat.
Add the minced garlic and cook for 30 seconds until fragrant.
Add the spinach and cook for 2 to 3 minutes until wilted.
Remove from the heat and allow to cool slightly.
Transfer the spinach mixture to a bowl.
Add the feta cheese and cream cheese.
Mix well until combined.

2. Prepare the chicken

Place each chicken breast on a chopping board.
Using a sharp knife, carefully cut a pocket into the side of each breast, taking care not to cut all the way through.
Divide the spinach and feta filling evenly between the chicken breasts.
Stuff the filling into each pocket.
Secure the openings with cocktail sticks if needed.

3. Season the chicken

In a small bowl, combine the oregano, paprika, sea salt and black pepper.
Rub the seasoning mixture over all sides of the chicken breasts.

4. Sear the chicken

Heat 1tbsp olive oil in an oven-safe frying pan over medium-high heat.
Sear the chicken breasts for 2 to 3 minutes per side until lightly golden.

5. Bake the chicken

Preheat the oven to 200°C (180°C fan).
Transfer the pan to the oven, or move the chicken to a baking tray.
Bake for 18 to 22 minutes, or until the chicken reaches an internal temperature of 75°C.

6. Rest and serve

Remove the chicken from the oven.
Allow it to rest for 5 minutes.
Remove any cocktail sticks before serving.
Serve with roasted vegetables, salad, or potatoes.

Tips

For extra flavour, add 1tsp lemon zest to the filling.
Replace oregano with thyme for a different herb profile.
If using frozen spinach, thaw thoroughly and squeeze out excess water before mixing with the cheeses.
