Method
Step 1: Prepare the prawns
In a bowl, combine the prawns with:
1tbsp olive oil
1 garlic clove, minced
1tsp smoked paprika
1/2tsp cayenne pepper
1/2tsp sea salt
1/4tsp black pepper
Mix well and leave to marinate for 10 minutes.
Step 2: Cook the prawns
Heat a non-stick frying pan over medium-high heat.
Add the prawns and cook for 2 to 3 minutes on each side until pink, opaque and cooked through.
Remove from the heat and allow to cool slightly.
Step 3: Make the avocado mixture
In a mixing bowl, combine:
Diced avocado
Finely chopped red chilli
Sliced spring onions
Half of the lime juice
Half of the chopped coriander
Gently mix together, taking care not to mash the avocado.
Step 4: Finish the prawns
Drizzle the remaining lime juice over the cooked prawns and toss gently.
Step 5: Assemble the lettuce cups
Lay the lettuce leaves on a serving platter.
Spoon the avocado mixture evenly into each lettuce leaf.
Top with the spicy prawns.
Step 6: Garnish and serve
Sprinkle with the remaining coriander and serve immediately.
Serving Suggestion
Serve with extra lime wedges on the side for squeezing over the lettuce cups just before eating. These make a great light lunch, starter, or party appetiser.
