Method
A fragrant and satisfying dish featuring juicy Moroccan-spiced turkey meatballs served over fluffy couscous with fresh herbs and lemon.
Step 1: Prepare the Meatball Mixture
In a large mixing bowl, combine:
Turkey mince
Grated onion
Minced garlic
15g chopped parsley
1tsp ground cumin
1tsp ground coriander
1tsp smoked paprika
1/2tsp ground cinnamon
1/2tsp salt
1/4tsp black pepper
Egg
Mix until evenly combined.
Step 2: Shape the Meatballs
Using your hands, form the mixture into approximately 16 equal-sized meatballs.
Place on a plate or tray.
Step 3: Brown the Meatballs
Heat 1tbsp olive oil in a large frying pan over medium heat.
Add the meatballs and cook for 6-8 minutes, turning regularly, until browned on all sides.
Transfer the meatballs to a plate.
Step 4: Start the Tomato Sauce
In the same pan, add:
1tbsp olive oil
Diced onion
Cook for 3-4 minutes until softened.
Add:
Minced garlic
1tsp ground cumin
1/2tsp smoked paprika
Cook for 30 seconds until fragrant.
Step 5: Simmer the Sauce
Add:
400g chopped tomatoes
100ml water
1/2tsp salt
1/4tsp black pepper
Stir well and bring to a gentle simmer.
Step 6: Finish Cooking the Meatballs
Return the meatballs to the pan.
Cover and simmer gently for 12-15 minutes, or until the meatballs are fully cooked and reach an internal temperature of 75°C.
Step 7: Prepare the Couscous
Place 200g couscous in a large heatproof bowl.
Pour over:
250ml hot vegetable stock
Cover and leave for 5 minutes.
Step 8: Fluff the Couscous
Add:
1tbsp olive oil
15g chopped parsley
Juice of 1/2 lemon
Fluff with a fork until light and separated.
Step 9: Assemble the Dish
Divide the couscous between serving bowls or plates.
Top with the meatballs and spoon over the tomato sauce.
Step 10: Garnish and Serve
Sprinkle with:
10g chopped parsley
Serve with fresh lemon wedges alongside.
