Method

A fresh, healthy, and flavourful dish featuring perfectly grilled salmon with tender asparagus and a bright lemon herb marinade.

Step 1: Prepare the Marinade

In a small bowl, combine the lemon zest, lemon juice, 1tbsp olive oil, parsley, dill, garlic, Dijon mustard, salt, and black pepper.
Mix well until fully combined.

Step 2: Marinate the Salmon

Place the salmon fillets in a shallow dish or tray.
Pour the lemon herb marinade over the salmon.
Turn the fillets to coat evenly.
Leave to marinate for 15-20 minutes.

Step 3: Prepare the Asparagus

Place the trimmed asparagus in a bowl.
Drizzle with 1tbsp olive oil.
Add the salt and black pepper.
Toss until evenly coated.

Step 4: Preheat the Grill

Preheat an outdoor grill, grill pan, or barbecue to medium-high heat.
Lightly oil the grill grates if needed to prevent sticking.

Step 5: Grill the Asparagus

Place the asparagus directly on the grill.
Cook for 4-6 minutes, turning occasionally.
Remove when lightly charred and tender-crisp.
Transfer to a serving platter and keep warm.

Step 6: Grill the Salmon

Place the salmon fillets skin-side down on the grill.
Cook for 4-5 minutes.
Carefully flip and grill for a further 2-4 minutes, depending on thickness.
The salmon is done when it flakes easily with a fork and reaches an internal temperature of 63°C.

Step 7: Serve

Arrange the grilled asparagus on serving plates.
Place a salmon fillet alongside the asparagus.
Garnish with lemon wedges.
Serve immediately.
