Parmesan-Crusted Haddock with Roasted Vegetables

Method

A simple and flavourful dish featuring flaky haddock topped with a golden Parmesan crust, served alongside perfectly roasted vegetables.

Step 1: Preheat the Oven

Preheat the oven to 200°C (180°C fan) / 220°C conventional.

Line a large baking tray and a separate baking dish with baking paper.

Step 2: Prepare the Vegetables

Place the carrots, courgette, red pepper, and red onion onto the baking tray.

Drizzle with 2tbsp olive oil.

Sprinkle over the oregano, salt, and black pepper.

Toss everything together until evenly coated.

Step 3: Roast the Vegetables

Spread the vegetables into a single layer.

Roast for 20 minutes.

Step 4: Prepare the Parmesan Crust

In a small bowl, combine:

Parmesan cheese
Breadcrumbs
Parsley
Garlic
1tbsp olive oil
Lemon zest

Mix until the ingredients are evenly combined and resemble coarse crumbs.

Step 5: Prepare the Haddock

Pat the haddock fillets dry with kitchen paper.

Season both sides with the salt and black pepper.

Place the fillets in the prepared baking dish.

Press the Parmesan mixture evenly over the top of each fillet.

Step 6: Bake the Fish

After the vegetables have roasted for 20 minutes, place the haddock in the oven on a separate shelf.

Bake for 12 to 15 minutes, or until the fish flakes easily with a fork and the Parmesan topping is golden brown.

Step 7: Finish the Vegetables

Remove the vegetables from the oven once tender and lightly caramelised around the edges.

If needed, keep warm while the fish finishes cooking.

Step 8: Serve

Divide the roasted vegetables between four plates.

Place a Parmesan-crusted haddock fillet alongside the vegetables.

Serve with lemon wedges for squeezing over the fish.
