Red onions

A milder, sweeter onion with vivid purple-red skin, popular eaten raw in salads and salsas as well as cooked in tagines and roasts.

Slice thinly and soak briefly in cold water or a squeeze of lime juice to mellow the sharpness before using raw; they also caramelise beautifully when cooked low and slow.
