Method

A beautifully rustic French-style pastry featuring sweet honey-roasted peaches, a buttery flaky crust, and a delicious almond filling.

Step 1: Make the Pastry

Place the plain flour into a large mixing bowl.
Add the caster sugar.
Add the pinch of salt.
Add the cold diced butter.
Rub the butter into the flour mixture using your fingertips until it resembles coarse breadcrumbs.
Gradually add the cold water.
Mix until a dough forms.
Shape the dough into a disc.
Wrap in cling film.
Refrigerate for 30 minutes.

Step 2: Roast the Peaches

Preheat the oven to 190°C (170°C fan).
Place the peach slices into a roasting tray.
Drizzle over the honey.
Add the lemon juice.
Add the vanilla extract.
Sprinkle over the cinnamon.
Toss gently to coat.
Roast for 15 minutes until slightly softened and fragrant.
Remove from the oven and allow to cool.

Step 3: Prepare the Almond Filling

Place the softened butter into a mixing bowl.
Add the caster sugar.
Beat until light and creamy.
Add the egg.
Add the vanilla extract.
Mix until combined.
Stir in the ground almonds.
Mix until smooth.

Step 4: Roll Out the Pastry

Roll the chilled pastry into a circle approximately 32cm in diameter.
Transfer it to a baking tray lined with baking paper.

Step 5: Assemble the Galette

Spread the almond filling over the centre of the pastry.
Leave a 5cm border around the edge.
Arrange the roasted peach slices over the almond filling.
Fold the pastry border up and over the fruit, pleating as you go.
Brush the exposed pastry with the beaten egg.
Sprinkle the flaked almonds over the peaches and pastry edge.

Step 6: Bake

Bake for 35-40 minutes until the pastry is golden brown and crisp.
Remove from the oven.

Step 7: Finish the Galette

Brush the warm peaches with 1tbsp honey.
Allow the galette to cool for 10-15 minutes.
Dust lightly with icing sugar if desired.

Step 8: Serve

Slice and serve warm or at room temperature.
Pair with vanilla ice cream, crème fraîche, or whipped cream.

Tip: Use slightly firm ripe peaches rather than very soft ones. They hold their shape better during roasting and create a more attractive galette.
