Method
These crispy cauliflower bites are coated in a light batter, baked until golden, and tossed in a sweet and spicy honey sriracha sauce. They make a fantastic snack, party appetiser, or vegetarian finger food.
Step 1: Prepare the Oven
Preheat the oven to 220°C (200°C fan).
Line a large baking tray with baking paper.
Step 2: Make the Batter
In a large bowl, combine the flour, cornflour, garlic powder, smoked paprika, and salt.
Gradually whisk in the water until a smooth batter forms.
Step 3: Coat the Cauliflower
Add the cauliflower florets to the batter.
Toss until every floret is evenly coated.
Allow excess batter to drip off before placing the florets on the prepared baking tray.
Arrange the florets in a single layer, leaving space between them.
Step 4: Bake the Cauliflower
Bake for 25 minutes until golden and crisp.
Turn the florets halfway through cooking for even browning.
Step 5: Prepare the Sauce
While the cauliflower is baking, combine the honey, sriracha sauce, soy sauce, lime juice, sesame oil, and minced garlic in a small saucepan.
Heat gently over low heat for 2 to 3 minutes, stirring until smooth and slightly thickened.
Remove from the heat.
Step 6: Coat the Cauliflower
Transfer the baked cauliflower to a large mixing bowl.
Pour the warm honey sriracha sauce over the cauliflower.
Toss gently until all the florets are evenly coated.
Step 7: Finish and Serve
Transfer the coated cauliflower bites to a serving platter.
Sprinkle with the sesame seeds.
Scatter the sliced spring onions over the top.
Serve immediately while hot and crispy.

Pair with fresh vegetable sticks for a sharing platter.
