A rich and velvety dessert combining intense dark chocolate with the bright citrus flavour of orange. Served in individual cups, these elegant mousse desserts are perfect for entertaining.
Step 1: Melt the Chocolate
Place the chopped dark chocolate into a heatproof bowl.
Set the bowl over a pan of gently simmering water.
Stir until completely melted and smooth.
Remove from the heat.
Allow to cool for 5 minutes.
Step 2: Prepare the Egg Yolk Mixture
Place the egg yolks into a mixing bowl.
Add the caster sugar.
Whisk until pale and slightly thickened.
Add the orange zest.
Add the orange juice.
Add the vanilla extract.
Mix until fully combined.
Gradually stir in the melted chocolate.
Step 3: Whip the Cream
Pour the double cream into a chilled bowl.
Whisk until soft peaks form.
Set aside.
Step 4: Whisk the Egg Whites
Place the egg whites into a clean bowl.
Add the pinch of salt.
Whisk until stiff peaks form.
Step 5: Combine the Mousse
Fold one-third of the whipped cream into the chocolate mixture.
Gently fold in the remaining whipped cream.
Add one-third of the whisked egg whites.
Fold gently to loosen the mixture.
Fold in the remaining egg whites until smooth and airy.
Take care not to overmix.
Step 6: Chill
Spoon the mousse evenly into 6 serving glasses or dessert cups.
Smooth the tops.
Cover loosely.
Refrigerate for at least 4 hours, or until set.
Step 7: Decorate
Pipe or spoon a small swirl of whipped cream onto each mousse.
Sprinkle with dark chocolate shavings.
Add a little fresh orange zest.
Place an orange segment on top.
Lightly dust with cocoa powder.
Step 8: Serve
Remove from the refrigerator just before serving.
Serve chilled.

Tip: For a more intense orange flavour, add an extra 1tsp orange zest to the mousse mixture before chilling.
