Method

This elegant summer salad combines sweet grilled peaches, creamy burrata, fresh salad leaves, and a light honey-balsamic dressing. It's perfect as a starter, light lunch, or side dish for outdoor dining.

Step 1: Prepare the Peaches

Wash and halve the peaches.
Remove the stones.
Brush the cut sides lightly with 1tbsp olive oil.

Step 2: Grill the Peaches

Heat a grill pan or barbecue to medium-high heat.
Place the peaches cut-side down on the hot grill.
Grill for 3 to 4 minutes until distinct grill marks appear.
Turn and grill for a further 2 minutes.
Remove from the heat and allow to cool slightly.
Slice each peach half into wedges.

Step 3: Make the Dressing

In a small bowl, combine:
2tbsp extra virgin olive oil
1tbsp balsamic glaze
1tsp honey
1tsp Dijon mustard
Add the salt and black pepper.
Whisk until smooth and well combined.

Step 4: Assemble the Salad

Arrange the mixed salad leaves on a large serving platter.
Scatter over the cucumber slices and cherry tomatoes.
Add the grilled peach wedges evenly across the salad.

Step 5: Add the Burrata

Place the burrata in the centre of the platter.
Tear it slightly open to reveal the creamy interior.

Step 6: Finish the Salad

Drizzle the dressing evenly over the salad.
Sprinkle with the toasted pine nuts.
Scatter the fresh basil leaves over the top.

Step 7: Serve

Serve immediately while the peaches are still slightly warm.
Divide among four plates and enjoy.
