For the Jalfrezi Sauce

Method

A classic Indian curry featuring succulent king prawns cooked with onions, peppers, tomatoes and aromatic spices in a rich, slightly spicy sauce.

Step 1: Marinate the Prawns

Place the king prawns in a bowl.
Add 0.5tsp salt, 0.5tsp ground turmeric and 1tsp lemon juice.
Mix well to coat evenly.
Leave to marinate for 15 minutes.

Step 2: Cook the Prawns

Heat 1tbsp vegetable oil in a large frying pan over medium-high heat.
Add the prawns.
Cook for 1 to 2 minutes on each side until they turn pink.
Remove from the pan and set aside.

Step 3: Prepare the Base

Add the remaining 1tbsp vegetable oil to the pan.
Add the sliced onions.
Cook for 5 to 6 minutes until softened and lightly golden.
Add the ginger, garlic and green chillies.
Cook for 1 minute, stirring continuously.

Step 4: Add the Spices

Add the ground cumin, ground coriander, paprika, turmeric and chilli powder.
Stir continuously for 30 seconds until fragrant.

Step 5: Make the Sauce

Add the chopped tomatoes and tomato purée.
Stir well to combine.
Cook for 8 to 10 minutes until the tomatoes break down and the sauce thickens.
Add 100ml water and 1tsp salt.
Simmer for 3 minutes.

Step 6: Add the Peppers

Add the red and green peppers.
Cook for 4 to 5 minutes.
The peppers should remain slightly crisp for an authentic jalfrezi texture.

Step 7: Finish the Curry

Return the cooked prawns to the pan.
Add the garam masala.
Stir gently to coat the prawns in the sauce.
Simmer for 2 to 3 minutes until everything is heated through.
Stir in most of the fresh coriander.

Step 8: Serve

Garnish with the remaining fresh coriander.
Serve immediately with:
Basmati rice
Naan bread
Chapatis
Cucumber raita
