Method
A creamy, tropical dessert inspired by the classic Thai combination of sweet mango, coconut, and sticky rice.
Step 1: Soak the Rice
Place the glutinous rice into a large bowl.
Cover completely with cold water.
Leave to soak for 4 hours or overnight.
Drain the rice thoroughly before cooking.
Step 2: Cook the Rice
Place the drained rice into a saucepan.
Add the coconut milk.
Add the whole milk.
Add the caster sugar.
Add the vanilla extract.
Add the pinch of salt.
Stir well to combine.
Bring gently to a simmer over a medium-low heat.
Reduce the heat to low.
Cook for 25-30 minutes, stirring frequently.
Continue cooking until the rice is tender and the mixture is thick and creamy.
Step 3: Prepare the Mango
Place the diced mango into a bowl.
Add the lime juice.
Sprinkle over the caster sugar.
Toss gently until evenly coated.
Set aside while the pudding finishes cooking.
Step 4: Make the Coconut Drizzle
Pour the coconut milk into a small saucepan.
Add the caster sugar.
Add the pinch of salt.
Heat gently for 2-3 minutes, stirring until the sugar dissolves.
Remove from the heat and keep warm.
Step 5: Assemble the Pudding
Spoon the warm sticky rice pudding into serving bowls.
Top each bowl with a generous amount of mango pieces.
Drizzle over the warm coconut sauce.
Sprinkle with toasted coconut flakes.
Add black sesame seeds if using.
Garnish with mint leaves.
Step 6: Serve
Serve warm for a comforting dessert.
Alternatively, chill for 2 hours and serve cold for a refreshing tropical treat.
