Method

A quick and flavour-packed stir-fry featuring tender chicken, crisp broccoli and a homemade teriyaki sauce. Perfect for a healthy weeknight dinner.

Step 1: Prepare the Teriyaki Sauce

In a small bowl, combine:

60ml light soy sauce
2tbsp honey
1tbsp rice vinegar
1tbsp sesame oil
2tsp cornflour
60ml water

Whisk until smooth and set aside.

Step 2: Prepare the Ingredients

Slice the chicken into thin strips.

Cut the broccoli into bite-sized florets.

Slice the bell pepper, julienne the carrot, mince the garlic and grate the ginger.

Step 3: Cook the Chicken

Heat 1tbsp vegetable oil in a large wok or frying pan over medium-high heat.

Add the chicken strips and stir-fry for 5-6 minutes until lightly golden and nearly cooked through.

Remove the chicken from the pan and set aside.

Step 4: Stir-Fry the Vegetables

Add the broccoli, bell pepper and carrot to the same pan.

Stir-fry for 4-5 minutes until the vegetables are tender-crisp.

Add the garlic and ginger and cook for 30 seconds, stirring constantly.

Step 5: Combine Chicken and Vegetables

Return the chicken to the pan with the vegetables.

Stir well to combine.

Step 6: Add the Teriyaki Sauce

Give the sauce a quick stir, then pour it into the pan.

Cook for 2-3 minutes, stirring frequently, until the sauce thickens and evenly coats the chicken and vegetables.

Step 7: Check for Doneness

Ensure the chicken is fully cooked and has reached an internal temperature of 75°C.

The broccoli should remain slightly crisp.

Step 8: Garnish and Serve

Remove from the heat.

Sprinkle with:

1tsp sesame seeds
Sliced spring onions

Serve immediately on its own or with steamed rice or noodles.
