Method
A delicious appetiser featuring sweet caramelised onions, creamy goat cheese, and crisp toasted baguette slices.
1. Prepare the Crostini
Preheat the oven to 190°C (170°C fan).
Slice the baguette into 12 slices, each about 1.5cm thick.
Arrange the slices on a baking tray.
Brush lightly with 1tbsp olive oil.
Bake for 8-10 minutes, turning halfway through, until golden and crisp.
Remove from the oven and allow to cool slightly.
2. Caramelise the Onions
Heat the remaining 1tbsp olive oil and 1tbsp butter in a large frying pan over medium heat.
Add the sliced onions and ½tsp sea salt.
Cook for 10 minutes, stirring occasionally, until softened.
Stir in the 1tsp brown sugar.
Reduce the heat to low and continue cooking for 20-25 minutes, stirring regularly, until the onions are deep golden brown and caramelised.
Add the 1tsp balsamic vinegar and cook for a further 1 minute.
Remove from the heat and allow to cool slightly.
3. Assemble the Crostini
Spread a generous layer of goat's cheese over each toasted baguette slice.
Spoon the caramelised onions evenly on top.
Sprinkle with the fresh thyme leaves.
Season with the remaining ¼tsp black pepper.
4. Serve
Arrange on a serving platter.
Serve warm or at room temperature.
Chef's Tip: For extra flavour, drizzle the finished crostini with a little balsamic glaze just before serving.
