Method
This elegant tart combines flaky puff pastry with sweet peaches and a glossy honey glaze. It's simple to make and perfect for dessert, afternoon tea, or a summer gathering.
Step 1: Prepare the Oven
Preheat the oven to 200°C (180°C fan).
Line a baking tray with baking paper.
Step 2: Prepare the Pastry
Unroll the puff pastry onto the prepared baking tray.
Using a knife, lightly score a border approximately 2cm from the edge without cutting all the way through.
Prick the centre area several times with a fork to help prevent excessive puffing.
Step 3: Make the Honey Glaze
In a small bowl, combine:
40g honey
20g melted butter
1tsp vanilla extract
1tsp lemon juice
Stir until smooth.
Step 4: Assemble the Tart
Arrange the peach slices evenly within the scored border, slightly overlapping them.
Brush half of the honey glaze mixture over the peaches.
Sprinkle the peaches with 30g light brown sugar.
Step 5: Finish the Pastry Edge
Brush the scored pastry border with the beaten egg.
If using flaked almonds, scatter them around the border.
Step 6: Bake
Place the tart in the preheated oven.
Bake for 25 to 30 minutes, or until the pastry is golden and crisp and the peaches are tender.
Step 7: Add the Final Glaze
Warm the remaining 20g honey for a few seconds until runny.
Remove the tart from the oven.
Brush the warm honey over the hot peaches for a glossy finish.
Step 8: Serve
Allow the tart to cool for 10 minutes.
Dust lightly with 5g icing sugar if desired.
Slice and serve warm or at room temperature.
