Method
These crispy Spinach & Feta Puff Pastry Twists are perfect as a snack, appetiser, lunchbox treat, or party food. They are flaky, cheesy, and packed with flavour.
Step 1: Prepare the filling
Heat the olive oil in a frying pan over medium heat.
Add the spinach and cook for 2 to 3 minutes until wilted.
Stir in the garlic and cook for 30 seconds.
Remove from the heat and allow to cool for 5 minutes.
Squeeze out any excess liquid from the spinach and chop roughly.
Step 2: Make the spinach and feta mixture
Place the cooled spinach in a bowl.
Add the crumbled feta cheese.
Add the grated cheddar cheese.
Stir in the dried oregano.
Mix until evenly combined.
Step 3: Assemble the twists
Preheat the oven to 200°C (180°C fan).
Line a baking tray with baking paper.
Unroll the puff pastry onto a lightly floured surface.
Spread the spinach and feta mixture evenly over one half of the pastry.
Fold the other half of the pastry over the filling and gently press down.
Cut into 12 equal strips, each approximately 2cm wide.
Step 4: Twist and glaze
Hold each strip at both ends and twist several times.
Place the twists on the prepared baking tray, leaving space between each one.
Brush all over with the beaten egg.
Sprinkle with the sesame seeds, if using.
Step 5: Bake
Bake for 18 to 22 minutes until golden brown and puffed.
Remove from the oven and allow to cool for 5 minutes before serving.

The twists can be stored in an airtight container in the refrigerator for up to 3 days and reheated in the oven at 180°C for 5 to 7 minutes.
